Baby Corn Chilli is spicy & delicious at the same time!! Are you a baby corn lover?
In boiling water add
SALT TO TASTE
BABY CORN 250 GRAMS (DIAGONALLY CUT)
Cook the the baby corn for 7-8 minutes until they are almost cooked.
Then strain out the baby corn using a spider & transfer them into a sieve.
To make the batter, in a large bowl add
CORN FLOUR 1/2 CUP
REFINED FLOUR 1/4 CUP
BAKING POWDER 1/2 TSP
SALT TO TASTE
BLACK PEPPER POWDER A PINCH
WATER AS REQUIRED

Add the water gradually while continuously whisking it to make a semi-thick batter.
Further add all the boiled baby corn in the batter & coat it well.
Fry baby corn in moderately hot oil & fry them over medium high flame until crisp & golden brown.
Once fried, transfer them into a sieve.
To make the sauce set a wok over high heat & heat it well. Further add
OUL 2 TBSP
And once the oil gets hot, add
ONION 2 TBSP (CHOPPED)
GINGER 1 INCH (CHOPPED)
GARLIC 4 TBSP (CHOPPED)
CORIANDER STEM 1 TBSP
GREEN CHILLI 3-4 NOS. (SLIT)
Stir & cook over high flame for a minute, then add
VEGETABLE STOCK / HOT WATER 150-200 ML
And bring the sauce to a boil, then add
LIGHT SOY SAUCE 1 TSP
DARK SOY SAUCE 1 TSP
GREEN CHILLI PASTE OF 1-2 CHILLIES
SUGAR A PINCH
SALT TO TASTE
WHITE PEPPER POWDER A PINCH
Stir well & then add CORN FLOUR 1 TBSP & WATER 2 TBSP in a separate bowl, mix well and add the slurry into the sauce while continuously mixing it.
Lower the flame & then add the fried baby corn along with
CAPSICUM 1/3 CUP (DICED)
SPRING ONION BULBS 2 TBSP (CHOPPED)
FRESH CORIANDER A SMALL HANDFUL (CHOPPED)
Stir well & coat the baby corn with the sauce then add
SPRING ONION GREENS A SMALL HANDFUL (CHOPPED)
Your baby corn chilli is ready.
